
Cabinet showrooms sell species as a color choice. In Florida it is a stability choice. The Gulf Coast sits at the wet end of the national moisture range, and the wood in your kitchen spends the rest of its life reacting to that. This is the version of the cabinet conversation that uses shrinkage numbers, box construction and 2027 pricing per linear foot instead of door style photos, and it explains why the most expensive species is not automatically the most stable one.
In Florida, the Wood Decision Is a Climate Decision
Wood does not stop moving after it leaves the mill. It reaches equilibrium with the air around it, gaining moisture when the air is humid and giving it back when the air is dry. The Wood Handbook, the reference the industry actually builds to, puts average interior equilibrium moisture content in the United States between about 6 percent in the desert Southwest and about 11 percent along the Gulf Coast.
That spread is the whole story. A cabinet door built and acclimated for a Midwest interior at 7 percent arrives in Hernando County and starts absorbing moisture until it settles near 11. It swells. Stiles push against rails, painted joints show hairline cracks, and drawer fronts that were flush at delivery sit proud by spring. Nothing was defective. The wood did exactly what wood does, in a climate nobody accounted for.
This is also why the Florida version of the cabinet question is not which species looks best. It is which species moves least, and how the door and box are built to absorb the movement that is left over. The Two Numbers That Predict Whether a Door Warps
Every species has published shrinkage values, and two of them matter for cabinetry.
- Tangential shrinkage: how much the wood moves along the growth rings. This is the larger of the two, typically 6 to 10 percent for most species from green to oven dry.
- Radial shrinkage: how much it moves across the rings, usually about half the tangential figure.
The number that actually predicts trouble is the ratio between them, written T/R. When a board moves nearly the same amount in both directions, it shrinks and swells evenly and stays flat. When one direction moves twice as much as the other, the board cups and twists as it cycles. The working rule in the trade is that a T/R ratio under 1.5 is stable, and a ratio over 2.0 signals high warp risk.
Note what that rule does not say. It does not say hardness. It does not say price. A dense, expensive, premium hardwood can carry a worse ratio than a cheaper one, and in the most popular cabinet species in America, it does.
Species by Species, With the Actual Numbers
- Hard maple: tangential 9.9 percent, radial 4.8 percent, T/R ratio 2.06. The default premium cabinet species in the United States, and on the ratio test it sits just past the high-warp-risk threshold. Maple is hard, takes paint beautifully and machines cleanly, which is why it dominates. It is also the species most likely to telegraph a seasonal humidity swing through a painted joint. In Florida, maple is a good choice built correctly and a problem built cheaply.
- White oak: tangential 10.5 percent, radial 5.6 percent, T/R ratio 1.87. The highest raw tangential movement of the three, but a meaningfully better ratio than maple, so it moves more overall and distorts less. Quartersawn white oak improves the behavior further because the cut orients the movement in the more forgiving direction. The open grain also hides small seasonal shifts that a smooth painted maple face would show.
- Black cherry: tangential 7.1 percent, radial 3.7 percent, T/R ratio 1.91. The lowest absolute movement of the three by a wide margin, with a ratio close to white oak's. On the numbers, cherry is the quiet winner for a humid climate. Its real drawback is not stability, it is that cherry darkens substantially with light exposure over the first year or two, which is a design consideration rather than a defect.
- Hickory: very hard and very handsome, with high shrinkage values that make it a demanding species in a climate that cycles. It works well in frame-and-panel doors where the panel is free to move and poorly in wide slab applications.
- Poplar and soft maple: the paint-grade workhorses. Both move less than people assume and cost meaningfully less than hard maple. For a painted kitchen in Florida, a well-built poplar or soft maple door is frequently the better engineering answer, not the compromise answer.
Read those five together and the pattern is clear. The species people pay the most for is not the one the climate favors, and the honest recommendation in a Gulf Coast kitchen leans toward cherry, quartersawn white oak, or a properly built paint-grade door over standard flatsawn hard maple.
How the Door Is Built Matters More Than the Species
A well-built door in a mediocre species outlasts a badly built door in a premium one, every time.
- Five-piece frame and panel: two stiles, two rails and a center panel that floats in a groove. The panel expands and contracts freely inside the frame instead of pushing against it. This is the construction that makes humid climates survivable, and it is why traditional cabinetry looks the way it looks.
- Solid slab doors: a wide glued-up panel with nothing to absorb movement. This is the construction most likely to cup in Florida, and the wider the door, the worse the odds.
- MDF center panel in a wood frame: the quiet best answer for painted kitchens. MDF is dimensionally stable and does not telegraph joint lines through paint, while the solid wood frame carries the structure and the hardware. Many high-end painted cabinets are built exactly this way, and it is a feature rather than a shortcut.
- Full MDF doors: stable and cheap, but with no moisture tolerance at the edges. One dishwasher steam leak or one persistent drip under a sink base and the swelling is permanent.
The Box Decides How Long the Kitchen Lasts
Doors get all the attention because doors are what you see. The box is what fails.
- Plywood boxes: lighter, stronger at the screw, and far more tolerant of moisture. Plywood does not swell irreversibly the way a compressed panel does when water finds an unsealed edge, which is why it is the standard upgrade for sink bases even in kitchens built otherwise to a budget.
- Particleboard and MDF boxes: flat, stable and inexpensive, and perfectly serviceable in a dry climate. In a humid one their weakness is at the edges: any variant swells faster if the edges are unsealed, and the swelling does not reverse when the moisture leaves.
- Where to spend if the budget is fixed: plywood on the sink base, the dishwasher run and the base cabinets, and accept engineered panel elsewhere. That single upgrade addresses the locations where water actually shows up.
- Edge banding quality: the least glamorous line on any cabinet spec and one of the most predictive. A cleanly applied, fully sealed edge is what keeps water vapor out of a core, regardless of what the core is made of.
Thermofoil and the Florida Kitchen
Thermofoil, also sold as RTF, is a vinyl skin heat-pressed onto an MDF core. It is smooth, cheap, easy to clean and extremely common in builder-grade kitchens, and it has one specific failure mode that Florida makes worse.
The adhesive holding the vinyl to the core is heat activated. Sustained temperatures above roughly 150 degrees soften it, the vinyl shrinks and it peels away from the core. That is why delamination almost always shows up in exactly two places: the cabinet next to the oven, and the cabinet directly above a toaster or coffee maker.
The cascade after that is the part people do not anticipate. Once the vinyl lifts at an edge, cooking moisture reaches the raw MDF underneath. The MDF swells, the swelling pushes more vinyl off, and the failure widens on its own without any new event. In a climate already sitting near 11 percent equilibrium moisture content, the swelling stage arrives faster. Thermofoil is not disqualified in Florida, but it should be specified with heat shields at the oven, and nobody should install it expecting the same service life it gets in Denver.
What Cabinets Cost in Florida in 2027
Cabinet pricing is quoted per linear foot of run, and 2026 to 2027 market data puts the three tiers in these ranges, with materials and basic installation labor included.
- Stock, $100 to $400 per linear foot: pre-sized and pre-built in fixed increments. Fast lead times, limited door and finish options, and filler strips wherever your walls disagree with the increments. Appropriate for rentals, flips and tight budgets.
- Semi-custom, $150 to $700 per linear foot: standard boxes with real choice on door style, finish, species, interior configuration and sizing within a range. Locally, most Hernando and Pasco projects land between $350 and $600.
- Fully custom, $500 to $1,200 per linear foot and up: built to your dimensions in any species and any finish, with luxury work in solid hardwood and premium hardware exceeding $1,500 per linear foot.
To convert that into a kitchen: a standard 10 by 10 layout carries roughly 20 to 25 linear feet of cabinetry. So the same room is a $2,500 cabinet package at the bottom of stock and a $30,000 package in the middle of custom, with the identical footprint and the identical appliances.
Why Roughly $400 per Linear Foot Is the Value Peak
Plot quality against price across those tiers and the curve is not a straight line. It climbs steeply from stock into semi-custom, then flattens hard somewhere in the upper semi-custom range.
The reason is that everything that determines durability becomes available at that point and does not improve much above it. Around $400 per linear foot you can specify a plywood box, five-piece frame-and-panel doors, a species chosen for stability rather than showroom fashion, soft-close full-extension hardware and a catalyzed finish. Those five things are the entire durability argument. Above that price you are buying dimensional freedom, exotic species, inset doors and hand-applied finishes, which are real value if you need them and pure aesthetics if you do not.
Where fully custom genuinely earns the premium is a short list: odd wall dimensions where filler strips would be visible and ugly, ceilings that need cabinets built to height rather than soffited, a range wall built as furniture, or an inset door look that semi-custom lines simply do not offer. On a rectangular kitchen with standard ceilings, the extra spend goes into capability you will not use. The Florida Failure Nobody Budgets For
There is one situation in this market that breaks cabinets faster than any species choice, and it does not appear in a single national buying guide: the house with the air conditioning turned off.
Seasonal residents leave in April and return in November. Vacation rentals sit empty between bookings. Homes on the market get shown with the thermostat set to save money. In every one of those cases, interior relative humidity climbs toward outdoor conditions, and a Central Florida summer means the cabinets spend months at moisture levels no interior wood assembly was designed to hold, then get shocked back down when the system comes on.
That cycle, repeated annually, is what opens painted joints and cups slab doors. The fix is not more expensive cabinets. It is leaving the system running at a modest setpoint or installing a dehumidistat so the house cycles for humidity rather than temperature while it is empty. What to Ask Before You Sign a Cabinet Contract
- What is the box made of, and is the sink base different? If the answer is vague, assume engineered panel throughout.
- Are the doors five-piece or slab, and what is the center panel? Solid slab in a wide door is the answer that deserves a follow-up question in this climate.
- What species, and what cut? Quartersawn costs more and behaves better. On a painted kitchen, ask whether paint-grade species were considered, because the honest answer is often that they should be.
- What finish system? A catalyzed conversion varnish tolerates moisture and cleaning far better than a basic lacquer, and the difference shows up around the sink first.
- What is the lead time, and where do the cabinets sit before install? Cabinets stored in an unconditioned garage for three weeks acclimate to the garage, not the kitchen.
- Who is responsible if a door warps in year two? Get the warranty terms on movement specifically, in writing.
